Ingredients
1 Lb Ground Turkey
1 Medium Onion, diced
1 Red bell pepper, diced
3 Cloves Garlic, minced
1 (15 oz) Can Pumpkin puree
1 (15 oz) Can Low sodium black beans, drained and rinsed
1 (15 oz) Can Kidney beans, drained and rinsed
1 (8 oz) Can Fire-roasted diced tomatoes
1 (8 oz) Can Tomato sauce
1 Cup Chicken or vegetable broth
2 Tbsp Chili powder
1 Tsp Paprika
1 Tsp Cumin
1 Tsp Salt
1/2 Tsp Pepper
1 Tbsp Olive oil
Instructions
1. Wash Hands
Wash hands with soap and water.
2. Brown Ground Turkey
In a large pot or Dutch oven, add the ground turkey. Cook until browned about 5
minutes. Drain excess fat if needed.
3. Sauté Spices
Add olive oil, onion, red pepper and garlic. Sauté until soft. Stir in the chili
powder, paprika, cumin, salt, and pepper. Let the spices cook for about one
minute until fragrant.
4. Add Beans and Tomatoes
Add pumpkin puree, black beans, kidney beans, fire-roast tomatoes, tomato sauce, and
broth. Stir to combine.
5. Simmer Chili
Bring the chili to a boil, then reduce to a gentle simmer for 25-30 minutes. The longer it
simmers the deeper the flavors.
6. Add Toppings and Serve
Top with your favorite chili toppings (cheese, Greek yogurt, or green onions).
7. Wash Hands
Wash hands with soap and water.
