So, what does “Prime” mean?

Prime is a grade given by the U.S. Department of Agriculture to denote the highest quality in terms of tenderness, juiciness, and flavor. The USDA meticulously inspects and grades beef using a system that measures marbling and maturity. The higher the ratio of marbling and the younger the beef, the higher the grade.
